I dislike snow. Living in Maine, I have to deal with it for about half the year. Therefore, the question becomes, do I dislike snow enough to move out of Maine, to a warmer climate? At this point all signs are pointing to YES.
Project Runway was good this week. Christian was SO sure that he was going to win with his Janet Jackson meets Apolonia meets 1980’s X-man Storm. Did you see his face when Chris was announced the winner? Priceless. He’s getting more mouthy, too. Make it work!
The Hub and Sabrina and I had dinner with Mary and Rob on Wednesday night. Mary made buffalo chicken dip that she put in quesadillas. They were spicy and warm and tasty. So yummy. Thanks, Mary! And, here’s the recipe…
Buffalo Chicken Dip (Quesadillas)
2-4 Boneless Chicken Breasts, cooked and coarsely chopped or shredded
2 (8 oz.) Cream Cheese
1 cup Blue Cheese Salad Dressing( chunky)
1 cup Hot Sauce ( Frank’s hot wing sauce)
3/4 cup chopped celery
6 oz. shredded Cheddar Cheese
Cook chicken breast (Mary is a Pampered Chef dealer, and she cooked hers in a Micro Cooker. If you don’t have a Micro Cooker, just cook ’em any old way.)
Chop Chicken coarsely.
Sauté celery in Hot Sauce in Small Sauté Pan.
Soften cream cheese in microwave then combine with Hot Sauce/celery.
Add Blue Cheese Salad Dressing to Chicken.
Add half of the Cheddar Cheese.
Pour into a casserole dish.
Sprinkle remaining cheese on top and bake at 400 degrees for 25-30 minutes until hot and bubbly.
Serve with Tortilla Chips and/or celery sticks
Note from Mary: This makes lots, so for just a few people cut this in half. For the quesadilla’s I just spread the dip on ½ a tortilla, added shredded monterey jack cheese, smooshed it in ½ and baked it…..usually I spray both side w/non-stick and cook them in a non-stick pan….to cook 4 at once….I went with a stone.
