Cranberry, Sauced

An Explosion of Fall Color.

I made cranberry sauce for the first time ever. It was a beautiful, amazing thing. First, bring one cup of water and one cup of sugar to boil. Then, mix in 4 cups of cranberries. They will burst with tiny explosions of flavor! Boil more. Voila, sauce. Now, taste. Grimace. Add 2 cups more sugar. Taste again. Frown. Present to your family for Thanksgiving dinner. Ignore the horrified looks when they taste it. Throw it away.

    I boil 4 cups cranberries in 2 cups water. Put through food mill(reserving all the liquid). Return to pan and add 2 cups sugar. Heat to boiling. Simmer, mixing, until it thickens and turns to gel on a cold dish. My mom’s recipe. We used to make it when we were kids.

    Aren’t the berries, in water, the best holiday color? Silly, I know, but I look forward to seeing it. I use tons of cranberries, year round.
